First let's start by knowing, what is yam?

A good start to get an idea of ​​what yam is, it is a similar to cassava, but its taste is similar to potatoes. Originally from Africa and Asia, but over the years it has also been harvest in the Caribbean region; in Colombia its farming is mainly located on the Atlantic coast, where it has become a key product in the diet of the population.

It is a gluten-free product considered a low glycemic index food due to its contribution of complex carbohydrates and dietary fiber. It is an excellent source of vitamin C (27% of the recommended daily value), potassium, manganese, copper, calcium, iron, phosphorus, and  vitamins B (thiamine, riboflavin, folic acid, pantothenic acid, and niacin). It also provides antioxidants, for example vitamin A, which although it is not as abundant as in other vegetables.

Additionally, it also helps from diet to improve skin and respiratory problems, heart diseases, female endocrine system, digestion and capillary health.
