The Ministry of Agriculture and Rural Development created the yam chain with the idea of generating greater opportunities and competitiveness for the more than 30,000 families that belong to this sector.
Within this chain, which also includes trading companies, the “Harvest and Sell Fixed” program is included in order to ensure the marketing of yams at fair prices. It is important to highlight the increase in yam consumption, both nationally and internationally. At the national level, the main characteristic is the consumption of fresh yam, where it is the element of a wide variety of dishes from the cuisine of the Colombian Caribbean.
Additionally, in the international market the yam is beginning to be recognized as a tuber with extensive nutritional properties, where its demand is also driven by the immigrant communities present in countries like the United States.
